Asparagus is the shoot that the Asparagus officinalis shrub extends above the soil surface in the spring. It is known as a harbinger of spring. Its native region is considered to be the Eastern Mediterranean and Anatolia. In ancient times, the Greeks gathered wild asparagus, while the Romans cultivated it in fields.
The roots are cultivated for two years; they begin to produce a crop starting in the third spring. The shoots emerge as the soil warms. There are green and purple varieties. Shoots that do not see light are harvested as white asparagus.

A quick cleanup is all it takes before any cooking method.
Wash the asparagus thoroughly under running water.
Cut off the woody part at the bottom, about 2–4 cm. If you bend the shoot slightly, it will break off at the natural breaking point.
If it’s thick and fibrous, use a peeler to peel the lower part from the tip downward. For thin, fresh shoots, simply trim the ends. Do not peel the tiny leaves at the tip; do not cut off the spear-shaped tips.
